Resistant starch, and why it changes everything in your gut & with your blood sugar

There's a reason I keep saying carbs are not the enemy of your hormones, because this one, prepared the right way, works less like a "carb" and more like a tool.
Here's what makes it special: When you cook certain starches, like white potatoes and white rice, and then cool them, part of the starch actually changes its structure.
It becomes resistant, which means your body doesn't break it down and absorb it the way it would a normal carb.

Your body is designed to use estrogen and then get rid of the excess. Your liver packages it up, and sends it down to your gut to leave through your stool. Simple, right?
The catch is what happens in the gut on the way out. You have a community of bacteria that regulates estrogen, and when that community is out of balance, it produces more of an enzyme that basically un-packages that estrogen and lets it get reabsorbed back into your body instead of leaving.
So the estrogen you were supposed to clear gets recirculated, and if you're also a little sluggish and not going to the bathroom regularly, even more of it sits around and gets reabsorbed. This is a huge and overlooked piece of estrogen dominance. (I wrote more about this here)
This is exactly where resistant starch shines. It travels down to your gut undigested and feeds your beneficial bacteria, which ferment it into butyrate, a short-chain fatty acid that supports a healthier gut environment and keeps that estrogen-recycling enzyme in check.
It also keeps things moving, and regular elimination is one of the main ways excess estrogen actually leaves your body. So a cooked-and-cooled potato (or rice) is quietly helping you escort estrogen out instead of letting it pile back up.
BUT WHAT ABOUT BLOOD SUGAR!!
Because that starch resists digestion, it doesn't hit your bloodstream as glucose the way a fresh, hot potato or rice would. It behaves much more like fiber, so the same food, cooked and then cooled, gives a noticeably gentler blood sugar response.
